Method

Peel and coarsely chop the shallots, ginger, and garlic clove to prepare them for blending.

Combine the chopped shallots, ginger, garlic, ground coriander seed, salt, and pepper in a blender or food processor.

Add the lime juice and olive oil to the blender and blend until a smooth, consistent paste forms.

Add the chopped mango to the blended mixture and pulse gently until the mango is incorporated but retains some texture, creating a chunky marinade.
