Halve the papayas lengthwise and scoop out the seeds using a spoon, then carefully peel away the skin and discard.

Cut the papaya flesh into ¼-inch dice and transfer to a medium mixing bowl.

Add the seeded and diced plum tomatoes, jalapeño pepper, and red onion to the bowl with the papaya.

Stir in the fresh cilantro and lime zest, combining all ingredients gently to avoid bruising the papaya.

Pour in the fresh lime juice and toss lightly until all components are evenly distributed.
