GROUNDNUT SAUCE
Vegetables, singly or in combination, compose many East African stews. Frequently, legumes of some sort are one of the basic ingredients - peanuts, for instance, or dried beans. This Peanut sauce is Ugandan.

Heat the oil in a large pot or heavy-bottomed saucepan over medium heat. Once shimmering, add the diced onion and sauté for 3-4 minutes until softened and fragrant.

Add the diced tomatoes and curry powder to the pot, stirring well to combine. Cook for 2-3 minutes, allowing the tomatoes to begin breaking down and the spices to bloom.

Pour in 3 to 4 cups of water, stirring to incorporate all ingredients. Bring the mixture to a gentle boil, then reduce heat to medium-low.

Gradually add the finely ground unsalted peanuts to the pot, stirring constantly to prevent lumping. Continue stirring for 2-3 minutes until the peanuts are fully incorporated and the sauce thickens slightly.

Add the cooked and drained frozen spinach to the pot, stirring thoroughly to distribute evenly throughout the sauce.

Simmer the sauce over medium-low heat for 20-25 minutes, stirring occasionally, until it reaches a rich, creamy consistency and all flavors have melded together.

Season the sauce with salt to taste, adjusting as needed. Serve hot with steamed plantains, cassava, rice, or other traditional Ugandan accompaniments.
