Rinse the long-grain white rice and cook it according to package instructions, then set aside and keep warm.

Press the firm tofu between paper towels or a clean cloth to remove excess moisture, then cut it into 1-inch cubes.

Toss the tofu cubes in cornstarch seasoned with a pinch of salt until evenly coated, shaking off any excess.

Heat vegetable oil in a large skillet or wok over medium-high heat and pan-fry the tofu in a single layer until golden and crispy on all sides, turning occasionally. Remove the tofu and set aside.

In the same pan, add a little more vegetable oil if needed and cook the sliced onions over high heat, stirring occasionally, until they are deeply caramelized and charred at the edges.

Stir together the soy sauce, granulated sugar, and any remaining sauce ingredients in a small bowl until the sugar dissolves.

Return the crispy tofu to the pan with the charred onions, pour the sauce over everything, and toss to coat evenly, cooking for an additional 2 minutes until the sauce thickens slightly.
