Pound shallots, garlic, and ginger together in a mortar and pestle to form a coarse paste.

Heat oil in a wok or large skillet over medium-high heat, then add the pounded shallot mixture and turmeric powder, stirring constantly for 2–3 minutes until fragrant.

Add the chicken pieces to the wok and stir-fry until the surfaces are sealed and lightly browned, approximately 5–7 minutes.

Pour in the thick soy sauce and stir well to coat all the chicken pieces evenly.

Add the sliced onion rings to the wok and mix thoroughly with the chicken and sauce.

Reduce heat to medium-low, cover the wok, and simmer for 20–25 minutes until the chicken is tender and cooked through, stirring occasionally.
