Toaster-oven Soft Oatmeal Raisin Cookies

Preheat the toaster oven to 350°F.

Cream together the softened butter, brown sugar, and sugar in a large bowl until light and fluffy, about 2–3 minutes.

Beat in the eggs one at a time, then add the vanilla extract and mix until fully incorporated.

In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

Gradually add the dry ingredients to the butter mixture, stirring until just combined.

Fold in the oats and raisins with a spatula or wooden spoon until evenly distributed throughout the dough.

Drop rounded tablespoons of dough onto ungreased toaster-oven baking sheets, spacing them about 2 inches apart.

Bake in the preheated toaster oven for 11–12 minutes, until the edges are lightly golden but the centers still appear slightly underdone.

Remove from the toaster oven and let the cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
