About

Peanut oil is a vegetable oil extracted from the seeds of the peanut plant (Arachis hypogaea), a legume native to South America. The oil is obtained through pressing or solvent extraction, resulting in a pale yellow to amber liquid with a subtle, nutty aroma and mild flavor. Refined peanut oil has a neutral taste and high smoke point (approximately 450°F/232°C), while unrefined, cold-pressed varieties retain more pronounced peanut character and slightly lower smoke points. The oil is composed primarily of monounsaturated and polyunsaturated fats, with notable presence of oleic and linoleic acids.

Culinary Uses

Peanut oil is widely used in cooking across Asian, American, and contemporary cuisine due to its high smoke point and neutral flavor profile. It is particularly valued in Asian cooking—especially Chinese, Vietnamese, and Thai cuisines—for stir-frying, deep-frying, and wok cooking, where its stability at high temperatures prevents flavor degradation. The oil also appears in salad dressings, marinades, and as a finishing oil in unrefined forms. Its ability to withstand prolonged heat without breaking down makes it suitable for commercial and home deep-frying applications.
