The bees enzymatically break down complex sugars into simpler glucose and fructose, then deposit the nectar into honeycomb cells where water evaporates through hive ventilation, resulting in a supersaturated sugar solution typically containing 17–20% water and 80% sugars. Honey varies in color from nearly transparent (acacia, tupelo) to dark amber or nearly black (buckwheat, heather), with corresponding variations in flavor intensity and floral notes. Darker varieties tend to have more robust, sometimes mineral-forward flavors, while lighter honeys are typically milder and more floral.

The flavor profile depends entirely on the nectar source: monofloral honeys from specific plants (clover, orange blossom, wildflower) exhibit distinct characteristics, while polyfloral blends offer more complex, regional expressions. Honey's crystallization tendency varies by glucose-fructose ratio and temperature; some honeys remain liquid for years, while others crystallize within weeks.

Honey functions as both sweetener and flavor agent across global cuisines. It is used in baking and confectionery for moisture retention, browning, and subtle flavor complexity; in beverages from tea to cocktails; as a glaze for meats and vegetables; and as an emulsifier in vinaigrettes and marinades. In Mediterranean, Middle Eastern, and Indian cooking, honey appears in savory applications—drizzled over labneh, mixed into tahini sauces, or layered in pastries with nuts. Its viscosity makes it useful for coating, sealing, and creating texture in desserts.
