Tapioca is a starchy carbohydrate extracted from cassava root (Manihot esculenta), a woody shrub native to South America but now widely cultivated in tropical regions, particularly in Southeast Asia, Africa, and Brazil. The starch is derived by processing grated cassava root to release a milky liquid, which is then allowed to settle, dried, and processed into various forms. The resulting product is nearly pure starch, with a neutral flavor and white appearance.

Tapioca exists in several forms distinguished by processing methods. Pearl tapioca consists of small spheres created by agitation during drying. Instant tapioca (fine granules) requires minimal cooking time. Tapioca flour or starch is the powdered form used in baking and as a thickening agent. All forms share the characteristic of rapid hydration and gelatinization when heated, creating a translucent, slightly chewy texture.
