About

String beans, also known as green beans, snap beans, or French beans, are the immature, edible pods of the common bean plant (Phaseolus vulgaris), a legume native to Mesoamerica. The pods are harvested before full maturation, when the seeds inside remain small and tender, allowing the entire pod to be consumed. String beans are characterized by their elongated, slender form, bright green color (in most common varieties), and crisp texture when fresh. The "string" refers to the fibrous strand that runs along the pod's seam, which was prominent in older cultivars but has been largely bred out of modern varieties. Flavor is mild and slightly vegetal, with a subtle sweetness that becomes more pronounced when cooked.

There are several notable varieties, including Blue Lake (for fresh market and canning), Kentucky Wonder (heirloom pole bean with fuller flavor), and haricots verts (thin French varieties prized for their delicate texture). Geographic cultivation spans temperate and subtropical regions worldwide, with significant production in China, India, and the United States.

Culinary Uses

String beans are utilized across numerous culinary traditions as a versatile side vegetable. They are commonly steamed, boiled, sautéed, or roasted; steaming briefly preserves their bright color and crisp-tender texture. In Asian cuisines, particularly Chinese cooking, string beans are often stir-fried with aromatics like garlic and ginger, or braised with soy-based preparations. French cuisine features haricots verts in classical preparations such as salade niçoise and as a refined side vegetable. American and European traditions frequently serve them with butter, garlic, or cream-based sauces. They are also suitable for curries, casseroles, and integrated into mixed vegetable dishes. String beans pair well with garlic, sesame oil, mustard, and complementary vegetables like tomatoes and mushrooms.
