Silken tofu is a complete plant-based protein containing all nine essential amino acids, with approximately 6-8g of protein per 3.5-ounce (100g) serving. It is low in calories, fat-free or very low in fat depending on variety, and a good source of iron and calcium (particularly when coagulated with gypsum).

Silken tofu is a soft, custard-like soy product made from soybeans (Glycine max) that originated in China and is extensively used throughout East and Southeast Asia. Unlike firm or extra-firm tofu varieties, silken tofu is produced without the pressing step that removes excess moisture, resulting in a delicate, fragile texture with a high water content (approximately 85-90% water). The production process involves coagulating soy milk with a coagulant (typically nigari or gypsum) and allowing it to set in molds without draining, creating a smooth, creamy consistency with a subtle, mildly sweet flavor that readily absorbs complementary tastes.

Silken tofu exists in several textural grades: soft silken tofu, which is the most delicate; regular silken tofu, which has slightly more firmness; and firm silken tofu, which is more stable but still maintains the characteristic smooth texture of the silken variety.

Culinary Uses

Silken tofu's delicate texture and neutral flavor make it ideal for blended and soup-based applications rather than stir-frying or grilling. In East Asian cuisines, it is traditionally served chilled with simple toppings (soy sauce, ginger, scallions, bonito flakes) as an appetizer, or featured in miso-based soups where it remains intact in soft cubes. In contemporary Western cuisine, silken tofu functions as an egg and dairy substitute in smoothies, custards, dressings, mousses, and desserts due to its ability to create rich, creamy textures when blended. It is also used in sauces, puddings, and vegan ice creams. Silken tofu requires gentle handling and is typically added to hot dishes at the end of cooking to prevent breaking apart.
