The concentration and final consistency depend on the ratio of sugar to water and the temperature to which the syrup is cooked. Simple syrup, the most common form, typically uses equal parts sugar and water by weight. Sugar syrups can be further classified by cooking temperature (thread, soft ball, firm ball, hard ball, soft crack, hard crack stages) and may be infused with flavorings such as vanilla, citrus, or spices during preparation.

Sugar syrup serves as a foundational ingredient in both professional and home kitchens, functioning as a sweetener, binder, and preservative. The cooking temperature determines the syrup's final texture and application: lower temperatures yield thinner syrups suitable for beverages and glazes, while higher temperatures produce caramelized or crystalline products.

Culinary Uses

Sugar syrup is employed across diverse culinary applications: as a sweetening agent in cocktails, soft drinks, and cold beverages; as a binding and glazing agent in pastries, cakes, and confections; and as a component in candy-making and caramel production. In French cuisine, sugar syrups of specific densities (measured by Baumé scale) are essential to pâtisserie. They are used to moisten cake layers (sirop), create glazes and icings, poach fruits, and preserve them. In mixology, simple syrup is fundamental to many classic cocktails. Sugar syrup also serves as a base for fruit preserves and can be infused with herbs or spices to create flavored syrups for desserts and beverages.
