Heavy whipping cream is a dairy product consisting of the fat-rich layer that rises to the top of unhomogenized milk, containing between 36–40% milkfat by weight. Derived from bovine milk, it is characterized by its pale ivory color, rich texture, and mild lactose and milk protein profile. The high fat content creates the dense, smooth mouthfeel and contributes to both its whipping capability and culinary versatility. Unlike lighter cream varieties (light cream, half-and-half), heavy whipping cream's elevated fat content allows it to be whipped into peaks without the addition of stabilizers in most cases, though ultra-high temperature (UHT) processing and the presence of emulsifiers and thickeners in commercial versions may vary by producer and region.

Culinary Uses

Heavy whipping cream is employed across global cuisines as a finishing agent, enrichment ingredient, and base for secondary preparations. It is whipped into mousses, pavlovas, and dessert toppings; reduced into sauces to add body and richness to preparations ranging from beurre blanc to contemporary pan sauces; and incorporated into ice cream, custards, and ganaches. In French cuisine, it forms the base for crème fraîche and Chantilly cream; in Italian kitchens, it complements pasta and risotto dishes. The ingredient is also employed in soups, braises, and savory dishes to round flavor profiles and create silken textures.
