Common varieties include green cabbage (the most prevalent), red (purple) cabbage, and Savoy cabbage, which features crinkled leaves and a milder flavor. The leaves range from pale to deep green or purple, with a crisp texture and slightly sulfurous, faintly sweet flavor that becomes more pronounced when cooked. The interior leaves are typically paler and more tender than the outer protective leaves.
Culinary Uses
Head cabbage is one of the world's most versatile vegetables, used raw in slaws and salads, braised or sautéed as a side dish, and as a key ingredient in soups, stews, and fermented preparations like sauerkraut and kimchi. It features prominently in Central European, Asian, and Eastern European cuisines—from German cabbage stews to Chinese stir-fries and Korean fermented dishes. The outer leaves are often blanched and used as wraps for stuffed cabbage rolls. Raw cabbage adds crunch and nutrition to coleslaws; cooked cabbage develops deeper, caramelized flavors through slow cooking or roasting. It pairs well with vinegar, caraway seeds, garlic, and pork.
