Cheddar is a hard cheese originating from Somerset, England, traditionally produced from cow's milk through a process of curdling, pressing, and aging. The cheese is characterized by its natural pale yellow to deep orange color—intensified by the addition of annatto, a plant-based dye—and a firm, slightly granular texture that becomes increasingly crumbly with age. Flavor develops from sharp and tangy in younger cheddars (3-6 months) to complex, nutty, and crystalline in mature varieties (12+ months). Traditional West Country cheddar employs a unique "cheddaring" process, wherein curd blocks are stacked and turned repeatedly, resulting in a distinctly textured final product.

Modern commercial cheddar is produced globally with numerous regional styles, including American cheddar (typically milder and softer), Irish cheddar, and Australian cheddar, each with variations in aging time, moisture content, and flavor intensity.

Culinary Uses

Cheddar's versatility makes it one of the most widely used cheeses across cuisines. It functions as both a standalone eating cheese and a cooking ingredient in applications ranging from melting (burgers, grilled cheese sandwiches) to gratins, sauces, and baked goods. In British cuisine, mature cheddar features prominently in cheese boards and traditional Welsh rarebit. American cuisine employs cheddar extensively in mac and cheese, cheese fries, and casseroles. Its relatively high melting point and stable emulsification properties make it ideal for sauces and cheese-based dishes.
