Celery seeds are the small, oval-shaped seeds of Apium graveolens, a biennial plant native to the Mediterranean region. These seeds are typically 2-3 mm in length, tan to brown in color, and possess a warm, slightly bitter, intensely aromatic flavor reminiscent of the leafy celery plant but more concentrated and peppery. The seeds contain essential oils, particularly limonene and 3-n-butylphthalide, which account for their distinctive aroma and flavor profile. Celery seeds are distinct from celery salt, which is a mixture of ground celery seeds and table salt, and from celery seed extract, which is a concentrated form used in commercial applications.

Culinary Uses

Celery seeds function as a seasoning spice in numerous cuisines, valued for their ability to impart a concentrated celery flavor without the moisture or bulk of fresh celery. They are integral to pickling spice blends, curry powders, and dry rubs for meats. In European and North American cooking, celery seeds appear in salad dressings, particularly vinaigrettes; coleslaw; bread baking; and cheese preparations. They are commonly used in Indian cuisine within spice blends and as a tempering agent in oils. Celery seeds are also employed in the production of celery salt and in certain herbal infusions. A small amount—typically ½ to 1 teaspoon per dish—is sufficient due to their potent flavor.
