Vegetarian Tomato Hash

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hager Estate in Canton, Texas in 1982.

Preheat your oven to 375°F (190°C) and lightly grease a medium baking dish or cast-iron skillet with a small amount of butter.

Finely dice the onion, celery stalk, and garlic clove, then sauté them in a skillet over medium heat with 2 tablespoons of butter until softened and translucent.

Dice the tomatoes into roughly half-inch pieces and add them to the skillet with the sautéed vegetables, stirring to combine and cooking until the tomatoes begin to release their juices.

Remove the skillet from heat and season the vegetable mixture with salt and pepper to taste, stirring thoroughly to distribute the seasoning evenly.

Spread half of the bread crumbs evenly across the bottom of the prepared baking dish to form a base layer.

Spoon the tomato and vegetable mixture over the bread crumb base, spreading it into an even layer across the dish.

Top the vegetable layer with the remaining bread crumbs and dot the surface evenly with small pieces of the remaining butter.

Bake uncovered in the preheated oven until the top is golden brown and the filling is bubbling around the edges, then allow to rest for a few minutes before serving.
