Ingredients
- of your favorite chicken stock1 quart
- cleaned and chopped leeks3 unit
- of small diced potatoes2 cups
- of small diced smoked pork butt2 cups
- ½ teaspoon
- of small white beans2 cans
- 1 unit
- 1 unit
Method

Heat extra virgin olive oil in a large pot over medium-high heat until shimmering.

Add cleaned and chopped leeks to the hot oil and sauté, stirring occasionally, until softened and fragrant.

Stir in the small diced smoked pork butt and cook for 2-3 minutes to warm through and release its flavor.

Pour in the chicken stock and bring the mixture to a boil, then reduce heat to a simmer.

Add the small diced potatoes and stir well to combine with the stock and aromatics.

Simmer the soup uncovered for 15 minutes, or until the potatoes are tender but still hold their shape.

Drain and rinse the canned small white beans, then add them to the pot and stir gently.

Simmer for an additional 5 minutes to warm the beans through and allow flavors to meld.
