Saucy Lima Beans

Easy lima beans from the crockpot, made with canned lima beans or butter beans, tomatoes, bacon, and smoked sausage.

Ingredients

  • butter beans or lima beans
    drained
    3 cans
  • 1 can
  • 1 unit
  • green or red bell pepper sliced
    1 unit
  • (14 oz.) bottle ketchup
    1 unit
  • 1 cup
  • bacon
    fried, drained, and crumbled
    12 slices
  • kielbasa
    sliced
    1 pound

Method

Cook the bacon in a large skillet over medium-high heat until crispy, about 8-10 minutes, then transfer to a plate lined with paper towels and crumble once cooled.

In the same skillet, cook the kielbasa slices over medium heat for 5-7 minutes until browned on both sides, stirring occasionally, then set aside.

Add butter to the skillet and sauté the sliced onion and bell pepper over medium heat for 5 minutes until softened, stirring frequently.

Stir in the ketchup and brown sugar, mixing until the brown sugar dissolves and the mixture is well combined, about 1-2 minutes.

Add the canned tomatoes (with juice) and stir to combine, breaking up any large chunks with the back of a spoon.

Add the drained lima beans and return the kielbasa to the skillet, stirring gently to distribute everything evenly.

Reduce heat to medium-low and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens and flavors meld.

Fold in the crumbled bacon just before serving, reserving some for garnish if desired.

Taste and adjust seasoning as needed, then serve warm in bowls or as a side dish.
