Press the drained and crumbled tofu between layers of paper towels or cheesecloth to remove excess moisture, working gently to avoid compacting the tofu.

Combine the pressed tofu, minced garlic, lightly beaten eggs, wheat germ, herb-and-spice seasoning blend, and curry powder in a large bowl. Mix until the ingredients are evenly distributed and the mixture holds together.

Fold the finely chopped scallion into the mixture if using, stirring just until incorporated.

Divide the mixture into 8 equal portions and shape each one into a compact patty approximately 2.5 inches across and 0.5 inches thick.

Heat the vegetable oil in a large skillet over medium-high heat until it shimmers.

Working in batches to avoid crowding, carefully place the patties into the hot oil and cook for 5-6 minutes on the first side until golden brown and crispy.
