Irish Shepherd's Pie

One of the most famous Irish dishes, Shepherd's Pie is traditionally made from leftover mutton, minced and topped with mashed Potato. However, pre-cooked minced (or ground) Beef can be used.

Heat olive oil in a large skillet or pot over medium-high heat until shimmering.

Add the minced beef and cook, breaking it apart with a wooden spoon, until browned and no pink remains, about 5-7 minutes. Drain excess fat if necessary.

Stir in the chopped onions and carrots, cooking until softened, about 4-5 minutes.

Sprinkle flour over the meat and vegetables, then stir well to combine and cook for 1 minute to remove the raw flour taste.

Add the beef stock, tomato puree, thyme, and parsley, stirring to combine thoroughly.

Reduce heat to low and simmer gently for 10 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

While the meat cooks, cut the potatoes into even chunks and boil them in salted water until tender, about 12-15 minutes. Drain well.

Mash the warm potatoes with butter until smooth and creamy.

Preheat the oven to 200°C (180°C fan/400°F) if using a ceramic dish, or have it ready at this temperature.

Transfer the meat mixture to a baking dish and spread it evenly across the bottom.

Spread the mashed potato mixture over the meat layer, smoothing the top with a fork to create small peaks.

Bake for 15-20 minutes until the top is golden brown and heated through.
