Tomato and White Bean Soup

Ingredients
- (16-oz.) cans cannellini (large white beans)2 unitrinsed and drained
- -oz. can stewed tomatoes28 unit
- scallions (green parts only)2 unitchopped
- 1 cup
- Tbs. minced fresh cilantro or dill or more to taste2 unit
- salt-free herb-and-spice seasoning mix or to taste1 to 2 tsp

Rinse and drain the two cans of cannellini beans, discarding the packing liquid.

Heat the vegetable broth in a large pot over medium heat until small bubbles begin to form at the bottom.

Add the stewed tomatoes and drained cannellini beans to the pot, stirring to combine.

Bring the mixture to a gentle simmer and cook uncovered for 10-12 minutes, allowing the flavors to meld.

Stir in the minced fresh cilantro or dill and season with the herb-and-spice seasoning mix and freshly ground black pepper to taste.

Taste and adjust seasonings as needed, then ladle the soup into bowls and top with chopped scallion greens before serving.
