Chop the onion and celery into uniform pieces, mince the garlic clove, and cut the carrots into ⅛-inch rounds, keeping them separate.

Heat a heavy-bottomed pot over medium heat and add the chopped onion, cooking for 3-4 minutes until softened and translucent.

Add the celery and minced garlic to the pot, stirring frequently and cooking for another 2 minutes to release their flavors.

Add the carrot rounds to the pot and stir to combine with the aromatics, cooking for 2 minutes.

Simmer the soup uncovered for 20-25 minutes until the carrots are very tender and easily pierced with a fork.
