Add a small drop of green food coloring to the yolk mixture and stir until evenly tinted to resemble an eye, adjusting the color as desired.

Spoon the tinted yolk mixture into each egg white half, mounding it slightly in the center to create a rounded eyeball shape.

Place a sliced black olive in the center of each yolk mound to represent the pupil, pressing it gently into the filling to secure.

Use a toothpick to add a small dot of red food coloring at the edge of each olive pupil and feather it slightly outward to create a bloodshot effect.
