In a large mixing bowl, combine the evaporated milk, eggs, sugar, vanilla extract, and a pinch of salt, whisking together until the mixture is smooth and well blended.

Sift in the baking powder and gradually incorporate enough flour to form a thick, sticky batter that holds its shape but is still pourable. Mix until no dry lumps remain.

Cover the batter with a clean kitchen towel and allow it to rest at room temperature so it relaxes and the leavening activates.

Pour vegetable or sunflower oil into a deep, heavy-bottomed pot or Dutch oven to a depth of at least 3 inches and heat over medium-high heat until it reaches 350°F (175°C).
