Method

1
In a large mixing bowl, combine the evaporated milk, eggs, sugar, vanilla extract, and a pinch of salt, whisking together until the mixture is smooth and well blended.
5 minutes
2
Sift in the baking powder and gradually incorporate enough flour to form a thick, sticky batter that holds its shape but is still pourable. Mix until no dry lumps remain.
5 minutes
3
Cover the batter with a clean kitchen towel and allow it to rest at room temperature so it relaxes and the leavening activates.
30 minutes
4
Pour vegetable or sunflower oil into a deep, heavy-bottomed pot or Dutch oven to a depth of at least 3 inches and heat over medium-high heat until it reaches 350°F (175°C).
8 minutes
5
Using two wet teaspoons or a small cookie scoop, carefully drop rounded portions of batter into the hot oil, working in small batches to avoid overcrowding the pot.
2 minutes
6
Fry the loukoumas, turning them occasionally with a slotted spoon, until they are evenly golden brown and cooked through on all sides.
3 minutes
7
Remove the fritters with a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.
2 minutes
8
Arrange the loukoumas on a serving platter, drizzle generously with warm honey, and finish with a dusting of ground cinnamon before serving immediately while still warm.
