- roma tomatoes6 mediumchopped (about 2½ to 3 cups)
- olive oil packed sun-dried tomatoes½ cupslivered
- roasted garlic¼ cupchopped
- 2 tablespoons
- pitted oil-cured olives½ cupchopped
- fresh basil½ cupchopped
- 1 unit
- 1 unit
- grated Parmigiano Reggiano cheese to taste1 unit

Chop the roma tomatoes into small pieces and place in a colander to drain excess liquid for about 5 minutes.

Transfer the drained tomatoes to a large mixing bowl.

Add the slivered sun-dried tomatoes, chopped roasted garlic, chopped oil-cured olives, and fresh basil to the bowl.

Drizzle the extra virgin olive oil over the mixture and gently fold all ingredients together until well combined.

Season with sea salt and freshly ground black pepper to taste, stirring gently to distribute seasoning evenly.

Top with grated Parmigiano Reggiano cheese to taste just before serving.

Let the spread rest at room temperature for at least 10 minutes to allow flavors to meld before serving on toasted bread.
