Ingredients

  • oil for frying (palm oil is most authentic
    but any vegetable oil will do)
    1 unit
  • onion
    finely chopped
    1 unit
  • of garlic
    minced
    1 clove
  • ripe tomatoes
    chopped (or canned tomatoes, or tomato sauce or paste)
    1 or 2 unit
  • of spinach
    cleaned, stems removed or cassava leaves (feuilles de manioc), kale, collards, or turnip greens or similar, cleaned, stems removed and parboiled (or some combination of these)
    1 to 2 pounds
  • salt
    black pepper, cayenne pepper or red pepper (to taste)
    1 unit
  • canned sardines (2 or 3 cans is good
    but one can will do if you're on a tight budget)
    1 unit

Method

Heat the palm oil or vegetable oil in a large pot over medium-high heat until shimmering, about 1-2 minutes.

Add the finely chopped onion and sauté, stirring occasionally, until softened and translucent, about 3-4 minutes.

Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.

Add the chopped ripe tomatoes (or canned tomatoes, tomato sauce, or paste) and stir well to combine with the onion and garlic.

If using fresh greens like spinach, kale, collards, or turnip greens that have not been parboiled, add them now in batches, stirring after each addition until wilted before adding more.

If using parboiled cassava leaves or other pre-cooked greens, add them to the pot and stir to combine with the tomato mixture.

Drain the canned sardines, reserving the oil, and gently break them into bite-sized pieces without mashing them too much.

Add the sardine pieces and their reserved oil to the pot, stirring gently to distribute evenly throughout the stew.

Season the stew with salt, black pepper, cayenne pepper, or red pepper to taste, stirring gently to incorporate.

Simmer over medium heat for about 5-8 minutes, allowing the flavors to meld while being careful not to break up the sardines too much.

Taste and adjust seasoning as needed, then transfer to a serving bowl or individual plates and serve hot.
