If using whole spices such as allspice berries, cloves, or a dried bay leaf, place them in a dry skillet over medium-low heat and toast lightly, stirring frequently, until fragrant. Remove from heat immediately to prevent burning.

Allow any toasted whole spices to cool completely on a clean plate or paper towel before proceeding to grind them.
