Green Pepper Relish
Quick, fresh and so simple to make with a food processor. Its flavor is meant to be refreshing to offset other spicy hot dishes such as stews or grilled meat and it goes well with any bread.

Ingredients
- green bell pepper1 largevery fresh
- garlic clove1 mediumcoarsely chopped
- ⅛ teaspoon
- jalapeno chile1 unitseeded and diced (optional)
Method

Wash the green bell pepper thoroughly under running water, then pat dry with a clean cloth.

Remove the stem and core from the green bell pepper, then cut it into large chunks suitable for grinding or fine chopping.

Coarsely chop the garlic clove into small pieces.

If using the jalapeno chile, carefully seed it and dice it into fine pieces to control the heat level.

Combine the green bell pepper chunks, coarsely chopped garlic, and diced jalapeno (if using) in a mortar and pestle or food processor.

Grind or process the ingredients until a coarse, chunky relish consistency is achieved—the mixture should remain textured, not pureed.

Transfer the relish to a serving bowl and season with salt to taste, stirring well to distribute evenly.

Serve immediately as a fresh accompaniment to Ethiopian injera bread and stews, or cover and refrigerate until ready to serve.
