Warm Quinoa Salad

- quinoa1 cuprinsed, drained
- 2 cup
- chopped radicchio1 cupabout ½ head, + leaves for garnish
- ½ cup
- ½ cup
- fat-free honey mustard dressing½ cup
Method

Bring water to a boil in a medium saucepan over high heat.

Add rinsed and drained quinoa to the boiling water and stir to combine.

Reduce heat to low, cover with a lid, and simmer until the water is absorbed and quinoa is tender, about 15 minutes.

Remove from heat and let quinoa rest covered for 2 minutes, then fluff with a fork.

Toss gently to combine all ingredients.

Drizzle the fat-free honey mustard dressing over the salad and toss until all ingredients are evenly coated.
