Heat 3 tablespoons of olive oil in a large pot over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant, stirring frequently.

Stir in the couscous, ground cumin, cayenne pepper, and salt, coating the couscous evenly with the oil and spices. Toast for 2-3 minutes, stirring occasionally.

Pour in the tomato juice and water, stirring well to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10 minutes until the liquid is absorbed.

While the couscous cooks, prepare the sausages for grilling by pricking them several times with a fork to prevent bursting during cooking.

Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the pan or grates with the remaining 2 tablespoons of olive oil.

Grill the sausages for 12-15 minutes, turning occasionally, until they are cooked through and browned on all sides.

Remove the couscous from heat and let it rest for 2 minutes. Fluff gently with a fork to separate the grains.

Transfer the couscous to a large serving bowl. Stir in the lemon juice, diced tomato, and cilantro if using, mixing gently to combine.

Slice the grilled sausages into bite-sized pieces or leave whole, depending on preference. Arrange them over the couscous salad and serve warm.
