Frozen Apple Oatmeal Sandwiches

These are yummy, they are oatmeal cookies with a apple filling and half dipped in chocolate, for a prettier presentation dip half the cookies in milk chocolate and the other half of the cookies in white chocolate, I did.

Beat the softened cream cheese, sugar, apple juice, apple jelly, and ground cinnamon together in a bowl until smooth and well combined.

Lay out all the oatmeal cookies on a clean work surface and allow them to come to room temperature for 2-3 minutes if they are very cold.

Spread approximately 2 tablespoons of the cream cheese mixture onto the flat side of one oatmeal cookie.

Place a second oatmeal cookie flat-side down on top of the cream cheese mixture to form a sandwich, pressing gently to secure.

Repeat the spreading and sandwich-making process with the remaining cookies and cream cheese filling until all sandwiches are assembled.

Chop the milk chocolate into small pieces and combine with the vegetable oil in a microwave-safe bowl.

Heat the chocolate and oil mixture in the microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and smooth.

Dip each sandwich halfway into the melted chocolate coating, allowing excess chocolate to drip off, then place on a parchment-lined baking sheet.

Freeze the sandwiches on the baking sheet for at least 2 hours until the chocolate coating is firm and set.
