Nasi Kunyit

It is called 'festive yellow rice' because it is traditionally served during a festival. Keeping with tradition, the Chinese would serve nasi kunyit to mark the birth of their newborn, or as an offering to the Gods.

Rinse the glutinous rice under cold water in a fine-mesh strainer, stirring gently until the water runs clear, approximately 2-3 minutes.

Pour the coconut milk into a large pot and bring to a gentle simmer over medium heat.

Add the smashed ginger root, turmeric powder, and salt to the coconut milk and stir well to combine and infuse the flavors.

Add the rinsed glutinous rice to the coconut milk mixture and stir gently to distribute evenly.

Reduce heat to low, cover the pot with a tight-fitting lid, and simmer until the rice is fully cooked and the liquid is absorbed, approximately 15-20 minutes.

Remove from heat and let the rice rest, covered, for 5 minutes to allow any remaining moisture to be absorbed.

Using a fork, gently fluff the rice and remove any large pieces of ginger root, if desired, then serve warm.
