Apricot-Pecan Rice Stuffing

Use as a stuffing for roast duck or pork chops or as a side dish. Makes 6 servings.

Pour the boiling chicken broth over the chopped dried apricots in a small bowl and let sit for 5 minutes to soften, then set aside.

Melt the butter in a large skillet over medium heat, then add the sliced celery and cook for 3-4 minutes until it begins to soften.
