Apricot and Pecan Rice Dressing

Method

Melt butter or margarine in a large skillet over medium heat, then add chopped onion and celery, cooking until softened, about 3-4 minutes.

Add the hot cooked rice to the skillet and stir well to combine with the cooked vegetables.

Fold in the coarsely chopped pecans, coarsely chopped dried apricots, plumped seedless raisins, and chopped fresh parsley until evenly distributed.

Sprinkle salt, ground thyme, ground sage, and ground black pepper over the mixture and stir gently to incorporate all seasonings throughout.

Cook over medium heat for 3-4 minutes, stirring occasionally, until the dressing is heated through and flavors are blended.
