Method

Peel the bananas and slice them into thin, even rounds approximately 3–4mm thick to ensure uniform drying.

Pit the dates and halve them lengthwise, then rinse the raisins and sultanas under cool water and pat all fruit dry with a clean cloth.

Arrange the banana slices, dates, raisins, and sultanas in a single layer on clean drying racks or trays lined with cheesecloth, keeping each variety separate.

Place the trays in direct sunlight in a warm, well-ventilated area and allow the fruit to sun-dry for 2–3 days, turning the banana slices once daily to ensure even moisture loss.

Once all fruit is thoroughly dried, shriveled, and leathery with no remaining moisture, combine the bananas, dates, raisins, and sultanas together in a large mixing bowl.

Gently press and knead the mixed dried fruits together with clean hands until they begin to bind and meld into a cohesive, concentrated mixture.

Pack the combined dried fruit mixture tightly into a sealed glass jar or airtight container, pressing down firmly to remove air pockets and allow the natural sugars to concentrate further.

Store the jar in a cool, dark place for at least 24 hours before serving to allow the flavors to meld; serve in small portions as a snack or accompaniment.
