Tohu Char Kreoung

Soy gluten rolls are very popular with Khmer Krom vegetarian cooking. Slices soy gluten roll stir-fry with spicy lemon grass is delicious.

Ingredients

  • pieces Soy gluten roll. Rinsed under water and slices diagonally.
    2 Large
  • minced minced lemon grass.
    2 Tablespoons
  • yellow onion. Chopped.
    1 Small
  • garlic. Minced.
    2 Cloves
  • 2 Tablespoons
  • soy sauce.
    2 Tablespoons
  • 1 Tablespoon
  • ΒΌ Teaspoon
  • Chopped hot chili pepper
    or to your taste.(optional).

Prepare the kreoung spice paste by gathering your aromatics and grinding them together until a smooth, fragrant paste forms. Set the paste aside until ready to use.

Heat a generous amount of cooking oil in a large heavy-bottomed pot or wok over medium-high heat until shimmering. Ensure the oil is sufficiently hot before adding the spice paste.

Add the kreoung paste to the hot oil and fry, stirring constantly, until it becomes deeply fragrant and the oil begins to separate from the paste. This step is critical to developing the soup's foundational flavor.

Season the fried paste with a pinch of sugar to balance the bold aromatics, then stir well to incorporate evenly throughout the paste.

Add enough water or stock to the pot to create a hearty soup base, stirring to fully dissolve and integrate the spice paste into the liquid. Bring the mixture to a gentle boil.

Add your chosen chunky vegetables or protein to the simmering broth, ensuring all ingredients are submerged. Reduce the heat to medium-low and allow the soup to cook until everything is tender.

Generously season the soup with freshly cracked black pepper, tasting and adjusting the amount to achieve the dish's characteristic pungent warmth. Stir well to distribute the pepper throughout.
