Peanut Butter Noodles

Bring a large pot of salted water to a boil and add the linguine, stirring occasionally to prevent sticking.

While the pasta cooks, combine the peanut butter, soy sauce, sesame oil, sugar, and white wine vinegar in a small bowl, stirring until smooth and well blended.

Add the minced garlic cloves and minced onion to the peanut sauce, mixing thoroughly to distribute the aromatics evenly.

Taste the sauce and adjust seasoning with the salt as needed.

Drain the cooked linguine in a colander, reserving about 1/4 cup of the pasta cooking water.

Transfer the drained linguine to a large serving bowl and pour the peanut sauce over it, tossing gently to coat.

If the sauce is too thick, add a little of the reserved pasta water, a tablespoon at a time, tossing until the desired consistency is reached.

Divide into four servings and serve warm.
