Three Cheese Casserole

Preheat oven to 350°F.

Heat a large skillet over medium-high heat and add the ground beef, breaking it apart with a spoon as it cooks until browned, about 5-7 minutes. Drain excess fat if needed.

Add the finely chopped onion to the browned beef and cook for 2-3 minutes until softened, stirring occasionally.

Stir in the salt, ground black pepper, and garlic powder, mixing well to combine with the beef and onion mixture.

Add the cooked rice and chopped green chilis to the beef mixture, stirring until all ingredients are evenly distributed.

Layer half of the sliced zucchini in the bottom of a 9x13-inch baking dish, then spread half of the beef and rice mixture over the zucchini.

Arrange the remaining zucchini slices over the beef layer, then top with the remaining beef and rice mixture.

Cover the baking dish with aluminum foil and bake at 350°F for 35 minutes until the zucchini is tender and the casserole is heated through.

Remove from oven, let rest for 5 minutes, then serve warm.
