Crunchy Curried Chicken Salad

Method

Whisk together the plain yogurt, honey, lemon juice, curry powder, and salt in a medium bowl until smooth and well combined.

Combine the cooked chicken cubes, cooked rice, drained mandarin oranges, sliced red onion, and thinly sliced celery in a large bowl.

Pour the curry dressing over the chicken and rice mixture, then gently toss to coat all ingredients evenly.

Fold in the chopped dry roasted peanuts, reserving a small handful for garnish if desired.
