Ingredients
- 1 pound
- 2 tablespoons
- garlic2 clovesminced
- 1 tsp
- 1 tbsp
- crushed oregano or thyme1 tsp
- ½ tsp
- ½ tsp
- 2 tbsp
- jalapeno chile1 unitseeded and minced (wear gloves)
- – ¾ cup beer½ unit
Method
1
Cut the chicken breast halves into 1½-inch cubes and place in a large bowl. In a separate small bowl, whisk together the fresh lime juice, minced garlic, ground cumin, ground red chili pepper, crushed oregano, garlic powder, and salt.
2
Stir the canola oil, minced jalapeno chile, and beer into the spice mixture until well combined. Pour the marinade over the chicken cubes and toss to coat evenly.
3
Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to infuse. While marinating, soak wooden skewers in water to prevent burning.
4
Thread the marinated chicken pieces onto the soaked skewers, leaving a small gap between pieces for even cooking. Reserve any remaining marinade for basting.
5
Preheat the grill to medium-high heat, about 400°F, and lightly oil the grill grates. Arrange the skewers on the grill in a single layer.
6
Grill the chicken skewers for 12–15 minutes, turning every 3–4 minutes and basting with the reserved marinade, until the chicken is cooked through and the internal temperature reaches 165°F.
