Baked Tarragon Chicken

- chicken breast; boneless and skinned1 pound

- ¼ cup
- leaf tarragon; dried2 teaspoons
- leaf basil; dried2 teaspoons
- ½ teaspoon
Method

Preheat the oven to 375°F (190°C).

Pat the boneless, skinless chicken breasts dry with paper towels, then lightly season with salt and pepper.

Heat the virgin olive oil in an oven-safe skillet over medium-high heat, then add the chicken breasts and sear for 2-3 minutes on each side until lightly golden.

In a small bowl, combine the dry white wine, lemon juice, dried tarragon, dried basil, and hot red pepper flakes.

Pour the wine and herb mixture around (not over) the chicken breasts in the skillet.

Transfer the skillet to the preheated oven and bake for 15-18 minutes, until the chicken reaches an internal temperature of 165°F (74°C).

Remove the skillet from the oven and let rest for 2-3 minutes, then transfer the chicken to serving plates and drizzle with the pan sauce.
