Pat the caribou sirloin steak dry with paper towels and season both sides lightly with salt and pepper.

Combine the sugar, powdered ginger, chopped garlic, chopped onion, soy sauce, water, and crushed pineapple (with juice) in a small bowl, stirring until the sugar dissolves.

Heat a large skillet over medium-high heat and add the caribou steak, searing for 3-4 minutes per side until browned.

Pour the pineapple-soy marinade over the seared steak in the skillet.

Reduce heat to medium and simmer the steak in the sauce for 12-15 minutes, turning once halfway through, until the meat is cooked to desired doneness.
