Peel and slice the 3 large mangos into even pieces, removing the pit and discarding the skin.

Place the sliced mangos in a baking dish and sprinkle with ¾ cup sugar, 1 tsp cinnamon, and a pinch of salt, then toss gently to coat evenly.

Let the mango mixture sit for 5 minutes to allow the sugar to begin dissolving and releasing the juices.

Transfer the mango mixture to a 9-inch baking dish, spreading it in an even layer.
