Preheat the oven to 350°F (175°C).

Rinse the papayas under cold water and pat dry with paper towels. Slice each papaya in half lengthwise and use a spoon to scoop out the seeds.

Arrange the papaya halves cut-side up on a baking sheet. The hollow centers should face upward to hold the filling.

In a small bowl, combine the sugar and cinnamon, stirring until evenly mixed.

Divide the cinnamon-sugar mixture evenly among the papaya halves, sprinkling it into the hollow centers of each piece.

Place the baking sheet in the preheated oven and bake until the papaya flesh is tender and lightly caramelized at the edges, approximately 20-25 minutes.

Remove from the oven and let cool for 2-3 minutes before serving. The papaya can be served warm as is or topped with additional cinnamon if desired.
