Microwave Peanut Brittle

This is an easier version of Peanut Brittle that can be prepared in under 10 minutes using a microwave.

Combine sugar and white corn syrup in a microwave-safe bowl, stirring until the sugar begins to dissolve.

Microwave the mixture on high for 5 minutes, stopping to stir after 2.5 minutes to ensure even heating.

Add the roasted peanuts to the hot sugar mixture and stir thoroughly to coat evenly.

Microwave for an additional 1 minute on high until the mixture becomes light golden and the peanuts are well toasted.

Remove from microwave and immediately stir in the butter and vanilla extract until fully combined.

Add baking soda and stir vigorously for about 10 seconds until the mixture becomes foamy and light.

Pour the brittle mixture onto a buttered baking sheet in a thin, even layer, working quickly before it hardens.
