Irish Potato Candies

Method

Combine mashed potatoes and vanilla extract in a large mixing bowl, stirring until well incorporated.

Gradually add the sifted confectioners' sugar to the potato mixture, stirring continuously until a stiff dough forms.

Divide the dough into two equal portions. Mix ground cinnamon into one portion and ground cocoa into the other portion, stirring each until the color is evenly distributed.

Shape each portion into small balls or logs approximately ½ inch in diameter, working quickly as the mixture may become sticky.

Arrange the candies on a baking sheet lined with parchment paper, leaving ½ inch between each piece.

Allow the candies to air-dry at room temperature for 30 minutes until the surface firms up, then transfer to an airtight container for storage.
