Strawberry Fields Forever

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996.

Method

Pour boiling water into a large bowl and add the strawberry gelatin, stirring continuously until the gelatin is completely dissolved, about 1 minute.

Add the frozen sliced strawberries to the hot gelatin mixture and stir until the strawberries are thawed and fully incorporated into the gelatin, about 3 minutes.

Fold the drained crushed pineapple into the strawberry gelatin mixture until evenly distributed.

Gently fold the mashed bananas into the mixture until just combined, being careful not to overmix.

Stir in the coarsely chopped walnuts until evenly distributed throughout the salad.

Pour the mixture into a 9x13-inch baking dish or serving bowl and refrigerate for at least 2 hours, or until the gelatin is set to a firm consistency.

Cut into squares or scoop into individual serving bowls and serve chilled.
