Sprinkle unflavored gelatin over cold water in a small bowl and let stand for 2 minutes to bloom, then add hot water and stir until the gelatin dissolves completely.

Peel and finely dice the cucumbers and carrots into small, uniform pieces.

Finely mince the onions and combine with the diced cucumbers and carrots in a bowl.

Beat the cream cheese and lo-calorie mayonnaise together until smooth and creamy, using an electric mixer or hand mixer.
