Peach-Almond Parfaits

If using fresh peaches, wash, peel, and slice them into thin wedges. If using canned peaches, drain them thoroughly and pat dry with a paper towel.

In a mixing bowl, combine the part-skim ricotta cheese, granular sugar substitute, and a pinch of cinnamon. Stir well until the mixture is smooth and evenly blended.

Taste the ricotta mixture and adjust the sweetness or cinnamon level to your preference by adding more sugar substitute or cinnamon as needed.

Spoon a layer of the sweetened ricotta mixture into the bottom of each serving glass or parfait cup, filling approximately one-third of the glass.
